Yellow Squash Casserole
Use goat milk instead of spur cream and crushed garlic croutons. Good
use sour cream with home made bread crumbs just on top - turned out sour - tessa's
made at grandma's - panko and sour cream - turned out good
always used one squash
I think I mixed the panko in the sour cream mixture

6yellow squash
small, thinly sliced

½ cupsour cream

2eggs
large, room temperature

1 tablespoondried minced onion

1 teaspoonfresh thyme

½ teaspoonsalt

¼ teaspoonpepper

1 cupgrated cheddar cheese

¾ cuppanko breadcrumbs

2 tablespoonbutter
melted

Instructions
Step 1
Preheat your oven to 350 degrees F. Lightly grease or spray a 2-quart casserole dish or 9x13-inch baking pan with non-stick cooking spray.

Step 2
Wash and thinly slice the yellow squash. Place the slices into square glass pan
Step 3
In a medium mixing bowl, combine the sour cream, eggs, fresh thyme, salt, and pepper. Fold in grated cheese then pour over the sliced yellow squash. Mix to combine.
Step 4
mix in bread crumbs and top with some - may add parm chesse
Step 5
Bake for 30-35 minutes or until the cheese is melted and starting to bubble and the topping is lightly golden brown in color. You can also broil on low for the last few minutes to finish browning the panko topping.
Step 6
Remove from the oven and serve immediately.
