Ingredients

TO ADD AT THE BEGINNING
Vegetable Bullion
read the package to determine the amount in proportion to liquid
onion
chopped
broccoli
chopped or small florets
carrots
sliced or chopped
celery
sliced or chopped
potatoes
diced
tomatoes
canned, chopped, or crushed
1 teaspoonsItalian herb mix
SHORTER-COOKING INGREDIENTS
TO ADD TO THE LAST 15-20 MINUTES
canned beans
kosher salt
or coarse
black pepper
freshly ground
corn
peas
cheese
Grated or crumbled, such as cheddar, Parmesan, Provolone, Romano, feta, and so on, optional, for sprinkling on at the end
Instructions
Step 1
Bring 3 quarts of water to a simmer in a large soup pot over high heat.
Step 2
Add the bouillon cubes.
Step 3
Reduce the heat to keep the liquid at a simmer and add your choice of the longer-cooking ingredients.
Step 4
Let them simmer away until everything becomes fairly tender, about 30 minutes.
Step 5
Add your choice of the shorter-cooking ingredients, season with salt and pepper to taste, and let the soup simmer for another 15 to 20 minutes or so.
Step 6
Start tasting the soup ind the consistency of the ingredients is as you like it , serve it up-it's soup.
Step 7
Sprinkle some cheese on top, if you like.
