Ingredients

1red onion

150 gramCherry tomatoes

3 clovesgarlic

50 grampitted black olives

2 Tbspolive oil
plus extra for brushing
1gluten free sourdough loaf
2 Tbsppesto sun dried tomato paste
gluten free

250 gramgrated cheddar and mozzarella
Instructions
Step 1
preheat the oven to 200 degree c gas mark and roughly chop the onion courgetta and pepper place in a roasting tin with the tomatoes garlic olives and basil stalks and drizzle with olive oil season and toss to coat then roast for 20 minutes turning halfway.,
Step 2
slice the top off the loaf about 1/4 of the way down carefully remove the bread from inside the lid and the man loaf leaving about 15 cm thickness behind rub a little olive oil over the outside of bush halves. place cut sides down on a baking tray and roast for 10-15 minutes until golden and crusty.
Step 3
Brush the insides of the loaf with pesto or tomato paste spoon half the vegetables into the loaf sprinkle with 1/2 the basil and 1/2 the cheese then top with the remaining vegetables basil and cheese.
Step 4
Press the lid firmly on top and return the loaf to the oven for 10 minutes or until the cheese is bubbling cut into wedges and serve warm.
