Instructions
Step 1
Wash your chicken breast with vinegar and lime. Add in your seasonings and let it marinade for at least 30 minutes
Step 2
Once your chicken is done marinating you will heat the stove to medium heat. Cook your chicken until lightly browned. After, you will cover the chicken with water.
Step 3
Try to remove all the seeds from your dried chiles. Add in all your chiles/ (carrot, onion, garlic) to your pot with the chicken and boil until softened for about 10-15 minutes. Then you will remove the chiles and add seasonings and some of the water to a blender and blend until smooth.
Step 4
Pour the blended sauce back to your pot
and let simmer for at least 30 minutes. (I like to add some cilantro for flavor) Make sure to take your chicken out when fully cooked and shred it. ( add a little bit more of the consomé for flavor)
Step 5
Take your corn tortilla and dip it into the consomé, coating both sides. Place the tortilla on the pan and add your shredded chicken, cheese and onions/cilantro. Fold the tortilla and sear each side.
Step 6
Serve your tacos with cilantro/ diced onions, lime wedges and a side of the consomé 🤎
