Marinara Pasta

Chinese Name of Dish: 菠菜蘑菇番茄红酱意面 Recipe can be made with wheat or whole wheat pasta. I made with homemade marinara sauce, dish can be made with any marinara sauce found in supermarket. Avocado oil can be substituted with olive oil. Adjust condiment amount according to liking/preference. (意面可选择粗粮意面,牛油果油可用橄榄油代替。)

Instructions

Step 1
Soak pasta in cold water so it is softer to cook in the pot. Remove pasta from cold water, and cook pasta in boiling water till it is soften and ready to eat. (将意大利面泡在冷水中,泡过的意大利面比较容易煮熟煮软。将泡好的意大利面从冷水中捞出,放入装有热水的锅中煮熟。)
Step 2
Remove cooked pasta from boiling water using a strainer. Add olive oil to cooked pasta, fully mix olive oil into pasta to ensure even distribution. Olive oil will prevent pasta from sticking together. Place pasta in ice water bath to cool, this step will prevent over cooking the pasta, and remove excess starch on pasta to retain texture. (把煮熟的意大利面从沸水中捞出,加入橄榄油,并充分搅拌均匀。橄榄油可以防止意大利面粘黏在一起。将加了橄榄油的意大利面放入冰水中,保持意大利面的弹性和口感,还能去除熟意大利面表面多余的淀粉。)
Step 3
Heat the pan over medium-high heat, and add avocado oil to the pan. Add pre-cutted mushrooms and minced garlic to the pan, and stir-fry for about 3 minutes. Add marinara sauce to the pan, and stir contents till it's almost boiling. (起锅烧油,加入切好的蘑菇。蘑菇翻炒均匀后加入蒜末,再次均匀翻炒。加入红酱,等待酱汁煮沸。)
Step 4
Add spinach to the pan and stir evenly for 30 seconds. Add pasta back to the pan and stir till contents are distributed evenly. Add parmesan cheese to finish up the dish if desired. (红酱差不多煮沸后加入菠菜,搅拌锅中食材。再次加入意大利面,将面和酱汁搅拌均匀。出锅前可根据喜好加入芝士。)
