400gcavolo nero
roughly chopped, or use kale, spring greens, spinach, or any other leafy green

6 Tbspextra-virgin olive oil
plus extra to serve

2garlic cloves
left whole and squashed

1red chilli
finely chopped, optional

4pork sausages
Italian, skinned and roughly chopped

320gfusilli bucati pasta

parmesan

Bring a large saucepan of slightly salted water to the boil and cook the cavolo nero for about 10 minutes until softened.
Step 3
Drain, reserving the cooking water, and set aside.
Step 4
Heat the olive oil in a frying pan over a medium heat. Add the garlic and chilli, and sweat for one minute, then add the sausage meat and stir-fry for about five minutes.
Step 5
Add the cavolo nero to the pan and continue to cook on a medium-low heat while you cook the pasta.
Step 6
Bring the cavolo nero cooking water back to the boil, adding more water if necessary, and cook the pasta until al dente (check the on your packet for cooking time).
Step 7
Drain the cooked pasta, reserving a little of the cooking water.
Step 8
Add the pasta to the cavolo nero and sausage with a little of the cooking water, and mix well to combine
Step 9
Serve with a drizzle of extra-virgin olive oil and some grated parmesan.
