Step 1
1. Preheat oven to 350 degrees

2. Blend gluten free oatmeal to make it into flour. Set aside.

3. Shred or blend zucchini. I blended to save time and added half the amount of olive oil to make it easy to blend. Set aside.

4. In the blender or bowl blend/whisk together the eggs, oil, sugar, maple syrup, banana, vanilla, and collagen (optional) until smooth.

5. Mix all together, incorporating the zucchini last.
Step 6
6. Pour batter into muffin tins, bread pan, etc. and bake until complete. My muffins took about 30 minutes to complete. My bread pan took about 50 minutes to complete.
Step 7
7. Store in refrigerator or freeze!
