Instructions
Step 1
Pat pork dry and season. Heat oil in 12" skillet over med-high heat. Brown pork on all sides, 3-5 min per side. Once pork reaches 145, set aside and tent loosely with foil.
Maple Mustard Sauce
Step 2
Pour off excess fat from skillet. Add oil and heat over med until shimmering. Add onion and cook until softened and beginning to brown, 3-4 minutes.
Step 3
Increase heat to med-high and add broth. Deglaze the pan. Bring to a simmer and reduce until ⅓ cup, 3-4 min.
Step 4
Add syrup, vinegar, mustard, and accumulated pork juices. Whisk and reduce to 1 cup, 3-4 min longer. Season to taste. Drizzle over pork and serve.
