Salad
2 qtwater
1green pepper
small, cored & sliced thin
1red pepper
small, cored & sliced thin
1yellow pepper
small, cored & sliced thin
0.25 lbfresh snow peas
trimmed
½ cupcherry tomatoes
halved
Dressing
Instructions
Step 1
In a large pot, bring the water to a boil. Add the sliced pepper & blanch for 2 minutes. Add the snow peas & blanch 30 seconds more. Drain. Plunge the peppers & snow peas into ice water to stop the cooking process. Drain again.
Step 2
In a large salad bowl, toss the blanched peppers & snow peas with the cherry tomatoes.
Step 3
Combine the dressing ingredients in a small bowl. Add the dressing to the pepper mixture and toss well. Refrigerate until ready to serve.
