1sweet potato
small, peeled and cubed

0.25 headbroccoli
cut into florets

1 tspolive oil

0.5red onion
diced

2cloves garlic
minced

1 ½ tspfresh ginger
minced

0.33zucchini
cubed

0.5bell pepper
strips

2carrots
peeled sliced

1shallot
thinly sliced

¼ tspsalt
say needs salt

¼ tspcurry powder

cayenne
to taste

1 cupfull fat coconut milk

rice
to serve
Instructions
Step 1
Fill large pot with water
Boil sweet potato until soft while steaming broccoli
Drain pot and set aside
Heat oil in a pan, cook onion, garlic, ginger until translucent Add zucchini, bell pepper, carrots, shallot
Season with salt
Cool on medium until veggies are soft
Add curry powder, cayenne, and coconut milk
Cook on medium until sauce thickens
