Instructions

Preheat oven to 350 degrees

2. Line 2 baking sheets with parchment paper

3. Mix together black beans, corn, bell pepper, cilantro, red onion, cumin and salt in a large bowl.

4. Sprinkle a small handful of cheese across half of one tortilla. Fol- low with 1/2 cup veggie mixture and top with more cheese. Fold the tortilla in half and place on a baking sheet.

5. Bake for 12 minutes. Remove from the oven, let them cool before handling (they will be hot!). Cut each quesadilla in half or in quar- ters using a knife or pizza slicer.
