Vegan teff pancakes w/healthy chocolate syrup!

Instructions

Step 1
To make the syrup, let the dates soak in boiling water for 10 to 15 minutes. Then combine all the syrup ingredients in a food processor and blend until thin and smooth enough. If it’s still too thick, add more water. Let the syrup cool.
Step 2
For the pancakes, start by grinding / blending the teff flakes into teff flour. Then blend all the ingredients until the batter is thick but smooth.
Step 3
Preheat a pan, add oil once hot. Pour about ¼ cup of the pancake batter into the pan and cook until it firms up enough to be flipped, then let cook for 30 to 60 seconds on the other side. Repeat until all batter is used.
Step 4
Serve the pancakes by drizzling the chocolate syrup on top, and garnish with fruit and nuts. Enjoy!
