Instructions

Step 1
Cut chicken into thin strips (about 1/4" thick). Place in a bowl, sprinkle with Skinny Scampi seasoning, toss to coat and set aside.
Step 2
If you're making your own zucchini noodles, go ahead and spiral cut them at this time. If using bagged veggie noodles, go to the next step.
Step 3
In a large frying pan heat oil over medium high heat. Add chicken and cook for approx. 7-10 minutes until chicken is fully cooked. Stir the chicken occasionally to cook on all sides.
Step 4
Pour the cooked chicken into a bowl and cover the bowl with an upside down plate to keep it warm.
Step 5
Place the pan back on the heat and add the zucchini.
Step 6
Saute the zucchini for just one minute to soften, but not overcook. Season with a pinch of Dash of Desperation to taste.
Step 7
Add the warm chicken back to the pan and using tongs, toss with the zucchini noodles. Serve hot.
