Step 1
1. Chop the vegetables.
Step 2
2. Devein and remove shells from the shrimp.
Step 3
3. To a pan, add avocado oil spray and cook the sliced onions and Anaheim chile for 3-4 minutes.

4. Add Serrano peppers and cook for 3 minutes.
Step 5
5. Add the chopped tomatoes and cook for 4 minutes.
Step 6
6. Add more avocado oil spray. Add shrimp and seasonings of choice. Cook for 6 minutes or until the shrimp is cooked through. Top with chopped cilantro.
Step 7
7. Each serving gets 1.25 c shrimp, .75 c white rice, and 1/4 avocado (or sides of choice).
