Instructions

Step 1
Add olive oil to the large pan and heat over medium heat, add onion and cook until golden, then add mushrooms, salt, pepper, garlic granules, and nutmeg. Cook until golden stirring occasionally. Add spinach and ricotta and mix well, until spinach wilts. Set aside to cool.
Step 2
Cook pasta shells until al dente. Rinse with cold water and set aside to dry.
Step 3
For the sauce, melt butter in the saucepan, add flour and stir continuously until paste forms. This is called a roux. Add milk to the roux gradually, stirring as you go to avoid any lumps. Add onion with bay leave and cloves. Bring it to a boil, stirring continuously, until the sauce thickens. Discard the onion with bay leaf and cloves. Add 1/3 of mozzarella cheese, black pepper, salt and 1/3 tsp nutmeg. Mix well and let it cool a bit.
Step 4
Preheat oven to 200C (fan)
Step 5
Add about 1/3 if the sauce to the baking dish and spread it on the bottom. Stuff pasta shells with the filling (you can use a piping bag or spoon) and arrange them in the baking dish in a single layer.
Step 6
Top with the rest of the sauce and sprinkle with the remaining mozzarella cheese.
Step 7
Bake for 30-35 minutes or until golden.

Garnish with thyme leaves if desired and enjoy!
