Instructions

For the dressing

Step 1
Assemble all ingredients. Place chili, garlic, palm sugar into mortor and pestle and pound until flavours combined.
Step 2
Add the lime juice, tamarind pulp, coconut milk and soya sauce
Step 3
Taste - you want a balance of hot, sour, salty, sweet: if necessary, add a little more sugar, lime, tamarind or chili to get the right balance.
Step 4
Set aside

For the salad

Step 5
Put the pomelo flesh into a large bowl, add the chili, peanuts, green bean, cherry tomato, coconut, spring onions and garlic.
Step 6
Add enough dressing to generously coat everything.
Step 7
Serve sprinkled with fresh coriander and spring onions.
