Chopping
Step 1
Start by chopping the red onion and the cilantro finely and separately
Filling
Step 2
In a pan on medium heat, add 1tbsp of olive oil, followed by the onion. Let cook for 2 minutes and add the beans and corn, followed by the spices and lastly by the cilantro. Cook for 5 minutes and take off the heat.
Quesadilla
Step 3
Add 1tbsp of olive oil to the pan and cover it with one tortilla wrap. Add half the cheese, followed by the bean and corn mixture, followed by more cheese and cover with another tortilla wrap. Cook for 3-4 minutes on each side (flip helping yourself with a spatula and your hand) and serve with guac, salsa, sour cream or on its own!
