Beat eggs, oil, vanilla, lemon juice, lemon zest and sugar together in a bowl and mix. Fold zucchini in after sugar dissolve. Add wet mixture to dry and lightly mix. Pour batter into prepared pans. Step 4
Bake for 40 to 50 minutes, or until a toothpick comes out clean from the center when inserted. Cool for at least 30 minutes before cutting
