Ingredients
4 servings

2 stalkslemongrass stalks
tough outer layers removed

8green chilies
seeds removed

3shallot
medium

4 clovesgarlic

6black peppercorn

2 tspcoriander seeds

1 tspcumin seeds

2 tspsalt

½ tspground turmeric

2 tspbrown sugar

3kaffir lime leaf
very finely chopped, optional

1 tspshrimp paste

1 ½ tspgalangal
ginger

2 tsplime zest

2 Tbsplime juice

1 Tbspfish sauce

2 Tbspolive oil

50gcoriander leaves
Instructions
Step 1
Toast coriander, peppercorns and cumin in a pan until light brown. You’ll hear the crackling sound when they're ready. Let the spices cool so they will grind easily.
Step 2
Combine coriander seeds, cumin and peppercorn in a mortar, pound well. Transfer to the blender
Step 3
Add remaining ingredients to the blender
Step 4
Blend to a fine paste, scraping down the sides as you go.
