This here is the key to Haitian cooking it’s the spice we use an everything.It’s really one of my favorite thing to make when it comes to cooking. I love all the things that is put together to creat such an amazing flavor. I believe you will enjoy it as much as I do. #haitianepis 🇭🇹

Instructions

Step 1
To begin wash all the vegetables and start chopping them all into a big bowl. Peal your garlics witch will be a lot and add them to the rest of the veggies. No need to chop the garlic. Wash the ginger and turmeric and chop those and mesure it out or what I usually do is add one nice size root of ginger n one or two roots of turmeric. I wash them well and add it whole without peeling. However if it gross you out you may peel them. I leave the hot peppers whole just wash them. NOTE: if you don’t have fresh ginger and turmeric add 1 Table spoon ginger and 1 1/2 tsp. turmeric. NOTE: depending on how much Basil you like add accordingly but keep in mind it’s really strong you don’t want it to overpower the rest of the ingredients. NOTE: The turmeric is strong as well and will change the color if to much is added. For all those things just go with lest then to much then you will know next time what to add more of. NOTE:The base of the epis is green onions, parsley and garlic so you can never get to much of those.

Then the next step is to blend everything in a blender and to add liquide to the blender to help it blend smoothly add oil. This recipe takes a lot of oil it’s what helps preserve the epis for as long as you need it. Don’t be afraid to add oil. If your adding clove powder wait tell everything is blended and por it into a bowl then add the rest of the oil if there’s left and add your salt and clove and mix it well. Make sure there’s plenty of oil my friend. ( when using it in cooking then you will use less oil in your cooking ) Once everything is done I will recaman you store the epis in class jars. 1 because it’s a strong flavor so using class won’t leave the smell in your container and 2 it’s prettier. NOTE: Make sure everything is blend smooth. You will have to do several blenders at a time because all won’t fit in one blender all at once.
