Low Carb Creamy Tuscan Pasta

This is part one of my comfort food made light series! I am a huge fan of comfort foods. Who doesn't love pizzas, creamy dishes, stews, and casseroles?! What I am not a fan of is feeling gross and sluggish because the meal was so heavy. I have been making tons of my favorite comfort foods lighter with easy adjustments and healthier alternatives in recipes, so now I am going to share my favorites with you!
This creamy Tuscan pasta is a favorite of my clients. I have been using this cream sauce for years and it tastes rich and delicious, as if it was really cream. I also used Palmini Linguine in this recipe. I have been loving Palmini because it is a pasta alternative that is made from hearts of palm, which is a vegetable. Instructions
Step 1
Cube the chicken breast and add salt all over. Add minced garlic and massage in, set aside.
Step 2
Prepare the cream sauce by whisking together the almond milk and arrowroot or cornstarch until smooth, set aside.
Step 3
In a pan over medium high heat, add olive oil and saute the chicken and sundried tomatoes. Stir with a wooden spoon and brown, saute for about 5 minutes. Add Italian seasoning and saute another 2-3 minutes.
Step 4
Add almond milk mixture, salt and pepper all over, and bring to a simmer. Simmer for 5 minutes and make sure the chicken is cooked through. Add spinach and stir in until wilted, around 1 minute. Add Palmini pasta and stir in for 1 minute to warm. Remove from the heat and enjoy!
