Instructions

Step 1
Preheat broiler. Line medium baking tray for salsa
Step 2
Cut cherry tomatoes and limes in half and put on tray
Step 3
Deseed and roughly dice pepper and onion and put on tray

Broil tray for 12-14 minutes until veg softens and chars
Step 5
Put 3 T oil into frying pan over high heat. When smoking, add ground beef. Break up beef and fry for 10-12 minutes.
Step 6
Remove pan from heat and add cumin.

Put charred veg on cutting board and wipe down foil for re-use with nachos

Squeeze juice of charred limes over veg on cutting board, add 1 finely grated clove garlic and 10g cilantro

Chop veg together to desired consistency

Put half of tortilla chips onto lined tray. Grate over half the cheddar cheese. Repeat with remaining chips and cheese.
Step 11
Put tray in oven for 5-7 minutes to melt cheese and heat through.
Step 12
Finely dice avocado.
Step 13
Serve - scatter beef and avocado on tortilla chips, top with salsa, sour cream, and remaining 5g cilantro.
