Ingredients

350 gramschicken tenderloin
cubed or strips
2 Tbspbutter
2chili padi
2 sprigscurry leaves
3salted egg yolk
steamed and mashed
6 Tbspevaporated milk
½ tspchicken stock granules
1 Tbspsugar
⅛ tspwhite pepper
⅛ tspblack pepper
Marinade for Chicken
Instructions
Step 1
Mix chicken with egg white and coat the chicken with tapioca flour. Double fry and set aside.
Step 2
In a pan, add butter, chili padi, curry leaves and salted egg yolk. Flatten the egg yolk and cook until bubbly.
Step 3
Turn heat to low, put in evaporated milk, chicken stock granules, sugar and white pepper.
Step 4
Turn heat to high, add chicken and mix evenly.
Step 5
Sprinkle a dash of black pepper and serve.
