I knocked this recipe up needing a comfort food meal that wasn't difficult or complicated to make, or a stew, as it's no longer mid winter.

Ingredients
4 servings
6potatoes
large, sliced in 3mm slices
5carrots
medium, sliced thickly
1white onion
large, chopped
2garlic cloves
large, minced
1 packvegan mince
alternatively use 1 box of finely chopped mushrooms
2vegetable stock cubes
1 tspsmoked paprika
½ tspsalt
½ tsppepper
ground nutmeg
1 cuptomatoes
chopped
1 cupvegan milk
1 cupcoconut milk
1 tblspoil
2 tblspnutritional yeast
Instructions
Step 1
Add the oil to a pan on medium heat, and add the onions - sauté until lightly golden for around 5 minutes, then add garlic and chili. Sauté for another minute scraping the pan.
Step 2
Add the mince, spices, stock cubes and chopped tomatoes. Brown the meat, and then cover up and allow it to cook for 10-15 minutes.
Step 3
At the bottom of the slow cooker spoon in a few spoonfuls of the mince mixture, then top with the sliced carrots, and a layer of sliced potatoes. Repeat this mince, carrots, potatoes order until no more mince is left. Top off with a final layer of potatoes and shake nutritional yeast across that layer.
Step 4
Take the vegan milk and coconut milk and pour this over the potatoes so that it sinks down and saturates the rest of the pot.
Step 5
Cook on high for 2 hours or low for 3, checking the consistency of the top layer of potatoes from time to time. If they are soft, remove from heat and serve.
