heat the oil in a large pan

cook the onion and squash for 10 mins until softened

simmer for 20mins, stirring occasionally

take off the heat and add in the spinach

melt the butter in a pan and add the flour

take the pan off the heat and gradually add the milk, mixing well zfter each addition

put the pan back on the heat and cook for 5 mins, stirring well

stir in the nutmeg and season to taste

spoon 1/3 of the sauce over the bottom of an over proof dish

top with 3 lasagna sheets

spread the meat mixture on top, followed by 1/3 more of the sauce
