Instructions
Step 1
heat the oil in a large pan

cook the onion and squash for 10 mins until softened

stir in spices and cook for 1 min

add in the lamb
Step 5
brown for 5 mins
Step 6
add in the stock, apricots and tomato puree
Step 7
simmer for 20mins, stirring occasionally
Step 8
take off the heat and add in the spinach

preheat oven to 180oC

melt the butter in a pan and add the flour
Step 11
cook for 1 min, stirring occasionally
Step 12
take the pan off the heat and gradually add the milk, mixing well zfter each addition

put the pan back on the heat and cook for 5 mins, stirring well

stir in the nutmeg and season to taste
Step 15
spoon 1/3 of the sauce over the bottom of an over proof dish
Step 16
top with 3 lasagna sheets
Step 17
spread the meat mixture on top, followed by 1/3 more of the sauce
Step 18
top with the remaining lasagne sheets, sauce and breadcrumbs
Step 19
bake for 30 mins
