Instructions
Step 1
Chop the onion. Rinse the mushrooms, pat dry, chop and remove tough stems.
Step 2
Heat a large skillet over a medium heat. Add the oil. Stir in the onion and garlic. Cook 5 minutes, stirring occasionally, until golden brown.
Step 3
Add the mushrooms and season with salt to taste. Continue cooking mushrooms until they are soft and stew-like.
Step 4
Add the broth and coconut milk and stir to incorporate ingredients. Simmer a few minutes , then add in the thyme.
Step 5
Continue to simmer on low heat for a few more minutes to thicken. Serve with a juicy grilled steak!
