Sweet Potato/Kale Hash

make large batch and reheat throughout week. Add leftover salmon, chicken, turkey or beans. Substitute sweet potatoes for potatoes when reintroducing nightshades.

Instructions

Step 1
Heat the oil in a 12-inch skillet over medium heat.
Step 2
Add the sweet pota- toes, sage, cumin, salt, and pepper and sauté for 7 to 10 minutes, reducing the heat if necessary to prevent burning.
Step 3
Then add the kale and green onions and any extras and sauté for a few minutes more.
Step 4
Test to see if the sweet potatoes are cooked through; if not, add a few tablespoons of water, put a lid on the pan, and continue to cook for a few more minutes until done.
Step 5
Taste and adjust the salt and seasonings if necessary.
Step 6
Add in 1 diced medium red bell pepper to the hash when challenging nightshades in phase
