Keerai sambhar is a traditional South Indian dish that is preferably eaten with rice and a vegetable or pickle. Chips can also be used as a substitute if need be.

Instructions

Step 1
Wash toor dal, add a pinch of turmeric and place in cooker along with rice for up to 3 whistles
Step 2
Wash spinach well and chop finely
Step 3
Puree tomato or use tomato puree
Step 4
Puree dal after it finishes cooking with a masher
Step 5
In a pan, take 2 tbsp of oil. Add hing, 2 tbsp sambhar powder. Make sure to not burn this. Add tomato puree and cook until a nice aroma emanates.
Step 6
Add spinach/methi along with dal, salt and a little water. Cook on medium hot stirring in between. Once aroma of sambhar starts to come along with the boiling and spinach/fenugreek wilting, turn off heat.
Step 7
Prepare tadka. Take 1 tbsp oil in a small pan. Add 2 tsp mustard seeds, some fenugreek(methi) seeds/powder. After they splutter, add 2 pinches of hing. Turn off stove and immediately pour in to the sambhar mix. Stir once and cover.
