Step 1
Boil a pot of water. Add the eggs to the boiling water and cook for 9 minutes. Once the time is up place the eggs in an ice bath for 3 minutes. After that peel the eggs and place back in the ice bath to cool completely.
Step 2
Cut the garlic and the scallion. In a pan sauté the garlic until it had become toasted. Add the scallion and sauté for 15 seconds. Then add the soy sauce, vinegar, oyster sauce, and honey. Mix well, then bring to a simmer. Let simmer for 5 minutes.
Step 3
Place the eggs in a container where it is tightly packed. Pour the adobo marinade over the eggs. Let it marinade until it is room temperature. Once it is room temp, place the eggs in the refrigerator overnight.
Step 4
Once the eggs are properly marinated, cut the eggs into small pieces. You can also mash with a fork, or do what I do, and push it through a wire resting rack. Add the pepper and mayonnaise. Mix thoroughly.
Step 5
Take the bread and remove the crusts. Spoon the egg salad onto the bread, and make a sandwich. Cut the bread in half for easier eating.
