Spicy Salmon Poke Salad On Rice Cakes

I was reviewing one of my old recipes and felt that the concept was cool, but I could execute it much better. The result was this beautiful creation. This dish looks so beautiful when served and you can top it with other garnishes like avocado or crab meat. I would definitely make this to impress a small party for lunch or dinner!

Ingredients

Japanese Rice Cake
Spicy mayo
Poke Salad
2 lbssalmon
sashimi grade 1/2” diced
5 ozspring mix
1persian cucumber
sliced
0.5red onion
sliced
4 ozspicy mayo
3 Tbspsesame oil
Garnishes
Instructions
Step 1
Combine cooked rice, flour, and sesame seeds. Create 3 inch patties
Step 2
In a pan, add a tbsp of oil, once hot add two rice cake patties from step one and sear both sides until golden brown, approximately 4-6 Min each side
Step 3
Combine the ingredients for the spicy mayo and reserve
Step 4
Prepare the salmon by cutting it into 1/2” cubes and reserve
Step 5
Prepare the vegetables, by cleaning the spring mix, slicing the cucumber and red onions
Step 6
In a large mixing bowl combine the ingredients from step 3 to 5.
Step 7
Drizzle sesame oil and incorporate well
Step 8
Using a 3” cake ring, layer the rice cake then the poke salad.
Step 9
Finally garnish with your desired topppings
