Instructions
Step 1
Melt the butter with the oil in a large nonstick, frying pan over medium heat. Add the fish skin side down and cook for three minutes. Turn the fish over and cook the other side for a further 1 to 2 minutes.
Step 2
Lift the fish onto a warmed plate return the pan to the heat add a lemon juice and parsley and simmer for just a few seconds staring constantly.
Step 3
Pour the buttery juices over the fish to serve with the vegetables
