Instructions
Step 1
In a large stockpot warm garlic oil over medium heat until it shimmers. Add the chicken breast and cook through. Remove chicken from oil and set aside.
Step 2
Cook rice according to instructions and set aside.
Step 3
Add the ginger, scallion greens, carrot and celery. Cook until vegetables soften and begin to brown.
Step 4
Stir in the stock, scraping up any browned bits from the bottom of the pot.
Step 5
Add the star anise and Chinese five spice powder. Reduce the heat and simmer for 20 minutes.
Step 6
Remove the star anise. Add the bok choy, rice, and cooked chicken. Simmer until the bok choy wilts, about 5 minutes. Serve!
