Step 1
Pre-heat oven to 150C

Step 2
Heat 1 tbsp olive oil in an oven proof pot, season and cook your beef in batches over high heat until browned. Remove and set aside.
Step 3
Add onions, cook over low heat for 3-5 mins until starting to soften. Mix in garlic, cook for 1-2 mins.

Step 4
Add carrots & celery, season well, cook for 5-7 mins over a low heat until starting to soften. Mix through tomato puree.

Step 5
Pour in wine, tomatoes, sugar & mix together.
Step 6
Add beef back in, herbs, season well and bring to the boil. Cover with lid and place in the oven, cook for 2.5 hours.

Step 7
Remove lid and cook for a further 30 mins.

Cook your pasta according to packet instructions, serve with ragu with soy freshly grated parmesan.
