High-Protein Sweet Potato & Ginger Soup

This soup is a new favorite! It combines creamy sweet potato, carrots, a hint of ginger and garlic and tastes so good! Highly recommend making a big batch for lunch this week!

Instructions
Step 1
Chop up red onion, sweet potato and carrots. Then mince the garlic and ginger and add everything to a baking tray. Sprinkle with cinnamon, salt and pepper. Bake at 200 degrees for about 30 min.
Step 2
Transfer to a blender along with beans, almond milk and hot veggie broth.
Step 3
Blend until smooth and add more/ less liquid depending on the consistency you like. Serve with coconut yogurt & parsley and optional fresh bread to dip!
