Oyster Mushroom Birria Tacos

A vegan spin on Birria Tacos made with Oyster Mushrooms. Birria tacos are these wonderful messy tacos that are pan-fried in a deliciously spicey consommé usually made from stewing the meat. If you don't like mushrooms you can use soy curls or your favorite meat replacement. I like to use a combination of different dried chiles for that authentic Mexican flavor but you can use any dried chiles you have. I used Violife shredded white cheese for the inside and I made some vegan queso fresco to top it off!

For the Consommé

8dried chiles
like Guajillo and or Ancho- SEEDED

1chipotle peppers

2 cupsvegetable stock

½ cupapple cider vinegar

4Tomatoes
Charred

1onion
Charred

1 Tbspcoarse black pepper

1 Tbspsea salt

½ Tbspadobo seasoning

1cinnamon stick

6 Tbspgarlic
chopped

¼ tspginger
fresh chopped

½ tspcumin

3bay leaves

1 tspdried oregano

1 tspdried thyme

1clove

¼ cupcilantro
loosely packed

1 Tbsptomato paste

Instructions
Step 1
Take the seeds out of your peppers and toast them lightly with your seasonings to bring out those natural flavors.
Step 2
Char your tomatoes and onions then sautee in your garlic and ginger. Then deglaze your pot with some stock.
Step 3
Simmer together your charred vegetables and peppers in the stock and apple cider vinegar. Add in your seasonings and allow flavors to develop and shmingle together.
Step 4
Blend all these ingredients together with a hand blender or regular blender.
Step 5
Comb your oyster mushrooms with a fork to get that shredded texture. Saute your mushrooms in garlic and add some of your sauce and set aside for easy preparation.
Step 6
Dip your tortillas in your consommé and place it in the pan. Add your mushrooms and cheese then pan fry on both sides.
