Ricotta Hotcakes Recipe With Maple Bananas

Instructions
Step 1
Start by separating your eggs in two different bowls: place the egg whites in a big, clean bowl and the yolks in a separate one.
Step 2
To the yolks, add the milk and the ricotta and mix until everything is well combined and smooth.
Step 3
Once the batter is smooth, add the sifted flour and baking powder and combine until no lumps are visible.
Step 4
Grab your egg whites and beat them until light and fluffy, they will need to look as if they are clouds.
Step 5
Adding half of the beaten egg whites to the other bowl, fold them in from bottom to top, making sure you keep as much air in as you possibly can. Once you have folded in the first half, add the rest and repeat.
Step 6
Put a pan or skillet on the hob, turning it to medium heat. Add a bit of butter and let it melt, then using a ladle, spoon some of the batter into the pan.
Step 7
Let it cook until you start seeing the sides browning, then flip them over, lowering the heat if needed. Do not push them down in any way once you flip them over, or they will lose the fluffiness.
Step 8
Let it brown on the other side too and then set it aside on a plate covered with a clean kitchen towel.
Step 9
Keep cooking the rest of the batter until you are out.
Step 10
On a separate pan, possibly a non-stick one, place the peeled and sliced bananas face down. Add some of the maple syrup and let it cook on low until it starts to caramelize.
Step 11
Turn the bananas so the other side too can soak in the maple syrup and once it’s done, turn off and place on your ricotta hotcakes, making sure to add plenty more maple syrup for good measure,
