3 tablespoonsextra virgin olive oil

¼ cupfresh lime juice
2 limes

4 clovesgarlic
coarsely chopped

1 tablespoonpink himalayan sea salt

2 teaspoonspaprika

1 teaspoonfreshly ground black pepper

1 tablespoonground cumin

1 teaspoondried oregano

2 teaspoonscoconut sugar

Instructions
Marinate chicken
Step 1
In a blender combine everything under chicken besides the whole chicken until smooth
Step 2
Place chicken in a large baking dish and coat with marinade. Get some of of it under the skin and in the cavity. Let sit for 8 hours or overnight
Step 3
Preheat oven to 450 degrees
Step 4
Roast chicken for 20 minutes then reduce heat to 375 and cook for an hour until chicken is 165 from thermometer
Make sauce.
Step 5
In blender combine cilantro, mayo, apple cider vinegar, salt, jalapeños, garlic, lime and blend. While blender is running drizzle in olive oil.
