Instructions
Step 1
Heat the oil in a large frying pan; fry the onion and red pepper for 5 minutes, or until starting to soften. Add the mince and cook for a further 4-5 minutes, stirring to break it up, until the mince has browned all over. Add the chipotle paste and cook for another 2-3 minutes until the vegetables are soft and the meat is cooked through. Season then tip into a bowl and set aside; wipe out the pan with kitchen paper.
Step 2
Divide half of the cheese between 4 of the tortillas and then top each with a quarter of the beef mix. Sprinkle the remaining cheese over the top of each and sandwich with another tortilla. Heat the frying pan over a medium heat and then cook 1 quesadilla for 2-3 minutes on each side, until crisp and golden and the cheese is melted inside. Keep warm while you cook the remainder.
Step 3
Stir the lime juice, coriander and a pinch of salt through the yogurt. Cut each quesadilla into quarters and serve with the sauce to dip.
