Instructions

Step 1
Heat the oil in a large thick saucepan over medium heat. Add the onion and garlic and stir for 3 minutes.

Add potatoes, carrots, lentils, and stir for two minutes.
Step 3
Add the water, salt and cumin, cover the saucepan, reduce the heat, and leave for 25 minutes until the lentils and vegetables are completely soft.
Step 4
Place the mixture in a food processor or electric mixer and mash it until smooth.
Step 5
Return the soup to the saucepan, check the seasoning and add the lemon juice, then let it boil for two minutes.
Step 6
Pour the soup on plates and serve hot with toasted bread and extra lemon juice to taste.
