Instructions

Step 1
In large pot, melt butter.
Step 2
Add onion and cook until soft and not translucent.
Step 3
Add potatoes, water (heated), pepper, thyme, bay leaf, bouillon, & diced mushroom stems
Step 4
Once potatoes and mushrooms are cooked/softened, use hand blender to puree them. While blending, add milk gradually.
Step 5
Add the sliced mushroom tops, cover pot, and simmer another 30 minutes to allow the mushrooms to soften and the soup to develop more flavor. Stir about every 5 minutes.
