Beef wellington

Instructions

Step 1
Sear the beef for 4 mins turning regularly then set to one side.
Step 2
Use the same pan to fry the onion and garlic, finely chop then add the mushrooms, fresh thyme with a nob of butter, cook for 15 min then leave to cool

Pancake

Step 3
Mix the flour, eggs and milk into a batter
Step 4
Heat some oil or butter in a trying pan then pour in a small amount of the batter to cover the base of the pan.
Step 5
Cook for 1-2 minutes, turn over the cook for another minute.
Step 6
Layer the pancake on greaseproof paper and cook 5 more leave to cool.

Assembling the Wellington

Roll out the pastry 1 inch bigger than the beef
Step 8
Layer the pancakes over the top of the pastry then spread on the mushroom mixture leaving a 1 inch gap around the edges
Step 9
Place the beef on top of the mushroom mixture and roll up the pastry, making sure that the beef is well sealed. Wrap in cling film and Leave to chill.
Step 10
Place the Wellington on a baking tray and brush the top with the beaten egg. Bake in the oven for 25 to 30 minutes.
