Instructions

Step 1
Heat the oven to 400° F.
Step 2
In a small bowl, combine the garlic, 2 tsp of the salt, the garam Masada and pepper. Rub the mixture all over the chops and set aside.
Step 3
In a large ovenproof skillet, melt 2 tbsp of the butter over medium-high heat. Add the pork and sear without moving until dark golden, 3-5 minutes per side. Transfer to a plate.
Step 4
Reduce the heat to medium and add the remaining butter, then stir in the shallot and cook until lightly golden, 2 or 3 minutes. Add the peas, 1/4 tsp of salt and a little pepper, stirring to coat with the pan juices. Stir in 1/4 cup of water or white wine to pick up any browned bits.
Step 5
Nestle the chops in with the peas and bake until the pork is cooked through, 10- 15 minutes, or until temp is 135°.
Step 6
Sprinkle with the lemon zest and sea salt. Serve.
