Caesar Salad w/ Crouton Fried Chicken

Salads always taste better with some protein 😉 A crouton crusted fried chicken breast laid on top of a classic Caesar salad 🥗 This recipe will make enough Caesar dressing to make 6 salad servings.

Instructions

Step 1
In a bowl combine your chicken marinade ingredients together. Place your thin chicken breasts in the mix and marinade in the fridge for at least an hour.
Step 2
Make a paste out of your minced garlic and chopped anchovies.
Step 3
Whisk the garlic anchovy paste along with the egg yolks, lemon juice, Dijon, Worcestershire, cheese, salt & pepper.
Step 4
Leaving the olive oil to the end, whisk it in at a steady stream. Your mixture should achieve a pale yellowish color. Set aside.
Step 5
Remove your chicken from the marinade and add an egg to the marinade mixture.
Step 6
Crush your croutons and place in a shallow bowl.
Step 7
Mix together cornstarch and flour and place in another shallow bowl.
Step 8
Dredge your marinated chicken into the cornstarch mix, then egg mixture, and finally coat with the crushed croutons.
Step 9
Fry in vegetable oil at 350°F for 5-6minutes or until chicken reaches an internal temperature of 165°F.
Step 10
While your chicken cools down, roughly chop your washed romaine lettuce into Vite sized pieces.
Step 11
Place your chopped lettuce in a bowl & pour over some of your Caesar dressing. Toss to mix being careful not to bruise your greens.
Step 12
Plate your salad and top off with your fried chicken. Top off with freshly grated Parmesan cheese.
