Instructions
Step 1
Trim and thinly slice green onions on an angle.
Step 2
Core tomatoes and cut into ½" dice & mince garlic.
Step 3
In a mixing bowl, combine tomatoes, green onions, garlic, pesto, and 2 tsp. olive oil. Set aside.
Cook The Chicken (or Unfreeze)
Step 4
Pat chicken breasts dry, and season both sides with
seasoning blend.
Step 5
Place pan over medium heat. Add 1 tsp olive oil. Cook until minimum internal temperature of 165 degrees, 5-7
minutes per side.
Step 6
•Remove from burner. •Move chicken to cutting board and let cool, 2 minutes. •Wipe pan clean and reserve.
•After 2 minutes, cut into ½" dice.
Make the Quesadillas
Step 7
• Place tortillas on a clean work surface.
• Divide half the cheese between tortillas, placing on one half.
• Top with chicken, half the bruschetta, and remaining cheese.
• Fold tortilla over filling and press gently so it holds in place.
Cook the Quesadillas
Step 8
• Add 1 Tbsp olive oil to pan, work in batches if necessary.
• Add quesadillas to hot pan. • Cook until golden brown, 2-3 minutes per side.
• Repeat with remaining quesadillas if working in
batches.
• Eat!
