Instructions

Spinach

Step 1
Remove the stems from the spinach and thinly dice the onion.
Step 2
Heat the oil in the pan. Reduce the heat to medium high. Add the onion and fry for about 1,5-2min until soften.
Step 3
Add the spinach and fry until it has shrunk in size completely.
Step 4
Add the ricotta and fry for another minute.

Chicken

Step 5
Heat the oil in the pan. Reduce the heat to medium and add the chicken. Season with half the salt and pepper. Fry for about 3-4min.
Step 6
Flip the chicken and season again. Fry for another 3min.

Sandwich

Step 7
Cut the baguette in half. Spread both sides with olive oil and toast until golden brown.
Step 8
Top the bottom half with the spinach and chicken.
Step 9
Stack the other baguette half on top and enjoy!
