Step 1
Coat a large skillet with cooking spray and heat over medium-high heat. Add the sausage to the pan and cook until browned, 3-4 minutes, stirring to crumble. Add the zucchini, saute for 3 minutes while stirring frequently. Stir in 2 Cups of Water, the orzo, salt, and black pepper. Cover, reduce heat to low, and simmer until the orzo is tender and the liquid is absorbed, about 10-12 minutes, stirring occasionally
Step 2
Uncover the pan and gradually add the kale, stirring until it wilts. Stir in 1/4 Cup of the cheese and sprinkle the remaining 1/4 on top
