Instructions

Scrambled egg

Step 1
Chop the basil.
Step 2
To a bowl add the egg, cottage cheese and seasoning. Whisk until well combined.

In a pan heat the butter. Leave the heat on medium high. Add the egg mixture and fry for about 2min stirring occasionally.

Sandwich

Step 4
Toast the protein bread until crispy and golden brown.
Step 5
Meanwhile slice the tomato and grated or slice the parmesan cheese.
Step 6
Top the bottom half with the scrambled egg, parmesan cheese, arugula and tomato.
Step 7
Drizzle on the balsamic cream.
Step 8
Stack the other bread half on top and enjoy!
