Chipotles Viral Steak Quesadilla with Vinaigrette at home!!!

Ingredients
4 servings
2flour tortillas
2 cupsChihuahua-Style melting cheese
or mozzarell
1 lbsteak
2 Tbspchipotle adobo sauce
1 tspcumin
following
pepper
salt
oregano
paprika
1juice of lime
1 Tbspolive oil
1green bell pepper
1red onion
⅓ cupred vinegar
3 Tbsphoney
¾ cupneutral oil
1 tspsalt
1 Tbspdried oregano
2chipotle peppers in adobo sauce
¼ cupsour cream
Instructions
Step 1
For steak: combine adobo sauce, seasonings (1 tsp each), olive oil, juice of 1 lime. Whisk together well and add your steak to marinade and marinade for at least 20 minutes. Once finished marinading cook steak in a saute pan on medium heat- about 5 minuets each side or until desired doneness. cut into cubes and set aside.
Step 2
For fajitas: chop red onion & green bell pepper into slices. Saute with olive oil on medium/high heat for about 8 minutes. set aside.
Step 3
For Vinaigrette: To a blender, add vinegar, honey, salt, oregano, chipotle peppers in adobo. Mix in blender and while its blending add neutral oil. Store in a container (you will have extra!) and enjoy for up to 2 weeks.
Step 4
For Quesadilla: *amount of quesadillas will depend on tortilla size. add flour tortilla to a saute pan on medium heat with a little bit of olive oil. Add in your cheese, fajita veggies, and steak. Add in a bit more cheese and fold over quesadilla. flip until desired doneness.
Step 5
Cut quesadillas and serve with vinaigrette combined with greek yogurt or sour cream. Enjoy!!!
