500gChicken breast

3bell peppers

3 tablespoonsolive oil
Fajita Seasoning
1 Tbspsalt
1 tspchilli powder
1 Tbspground coriander
1 Tbspground cumin
1 tspblack pepper
2 Tbspsweet smoked paprika
1 Tbspgarlic powder
1 Tbspdried oregano
Salsa
White Sauce
1 cupsour cream
1 cupmayonnaise
50mlLemon juice
1 TbspCelery Salt
1 Tbspsugar
1 TbspDried parsley
1 tspSalt
½ tspPaprika
1 tspGarlic powder

Instructions
Chicken Fajita
Step 1
Cut the chicken breasts into strips
Step 2
In a small bowl combine all the fajita seasoning. You might not need all today. Store the remaining in a airtight jar for later use.
Step 3
In a large bowl , combine chicken strips generous amount of fajita seasoning and coat the seasoning around the chicken strips. Add half of olive oil and toss to coat. Let it marinate for at least 20 minutes or overnight in the refrigerator. Or use straightaway as i did today.
Step 4
When ready to cook, heat the remaining oil in a large skillet. Add the chicken strips in to a single layer and stir well until colour changes and , it will take around 7-8 minutes until chicken cooked through. Stir constantly to keep the strips separate.
Step 5
Thinly sliced the onion and bell peppers. add onion and bell peppers into chicken. Cover and cook until slightly reduced. After sauté until soft on high heat about 3-5 minutes.
Step 6
Serve immediately with warmed tortillas ,guacamole, salsa, and white sauce.
Step 7
You can add lime juice and parsley for extra flavour.

Cut the avocados in half. Remove the pit, scoop the flesh put and place in a bowl.
Step 9
Using a fork, roughly mash the avocado . Should be little chunks in it.
Step 10
Finely chopped the onion, diced the tomatoes finely, chopped the coriander, minced the jalapeño and garlic.
Step 11
Add everything in mashed avocado. Sprinkle salt, cayenne pepper and black pepper. Squeeze fresh lime juice.
Step 12
Mix everything together. Serve immediately!
White Sauce

Add everything in a bowl and mix. Store in a airtight container upto 2-3 weeks

Cut the tomatoes roughly

Add everything in a blender and blitz until chunky and well blended salsa.
