Step 1
1. Heat oil in pan, high heat. Season the duck and brown in the pan on both sides.

2. Meanwhile finely chop the veg

3. Turn heat down to medium. Tuck a bay leaf under each leg, add chopped veg & soften for 10min
Step 4
4. Add the wine, boil off the alcohol. Add the passata and stock.
Step 5
5. Bring to boil and remove the bay leaves.
Step 6
6. Taste, season then simmer on a low heat, partially covered for a minimum of 1 hour.
Step 7
7. This will take much longer than an hour usually, cook until sauce is ready and duck tender.
